Courgette provencal. Round courgette filled with ratatouille, topped with bechamel and parmigiano gratin, served over a rich tomato sauce (veggie ~ vegan without the topping).
Fillet of Scottish salmon en croute. Layered with bloomsdale spinach and smoked salmon cream cheese. Wrapped in puff pastry and served with a roasted cherry tomato and new potato salad on a white wine and cream sauce.
Mediterranean style lamb shank. Slow braised and served with a rich tomato, onion and garlic sauce, wilted spinach & parsnip puree.
Traditional cassoulet with Toulouse sausage and braised pork belly in a white bean and tomato sauce.
